Huizhou sesame cake making technique
Huizhou sesame cake is also known as "Huangshan sesame cake" or "fire stove cake". After being baked with charcoal, it is shaped like a crab shell and its color is like crab roe, so it is also called "crab shell yellow sesame cake". It is a traditional folk snack of Huangshan and even ancient Huizhou. During the Ming and Qing Dynasties, Huizhou merchants were prosperous. They traveled all over the world and traded between China and the West. In Huizhou, the birthplace of Huizhou merchants, Huizhou sesame cakes were born among the people because of the wide range of ingredients. It gradually became a traditional snack for local people and one of the most distinctive local customs in Huizhou. Because sesame cakes can be stored for a long time and are easy to carry, suitable for eating on the road, they have become one of the "three treasures" ("a pack of cakes, two books, and three ropes") that Huizhou merchants carry with them when they go out for business. It is not only a snack for Huizhou merchants to fill their stomachs when they go out, but also a symbol and witness of their fearlessness of hardships and pioneering spirit. Therefore, it is favored by Huizhou merchants and often given as gifts to business friends and guests from all over the world. In the 18th year of Emperor Qianlong's reign (1751), Jiang Chun, the head of the eight general merchants of Lianghuai salt merchants, "offered the emperor a commoner" and used Huizhou's unique dishes and snacks to welcome the emperor. The tribute of Huizhou sesame cakes was praised by Emperor Qianlong. Huizhou sesame cakes have become a delicacy sought after by people from all walks of life. Huizhou sesame cakes are made of exquisite ingredients, exquisite craftsmanship and unique flavor. During the Jiaqing period of the Qing Dynasty, Hu Fusheng, the ancestor of the Hu family, started to run a sesame cake shop. During the Daoguang period, he opened a Hu Xingtang sesame cake franchise store in Tunxi, and secretly made Huizhou sesame cakes with various flavors. His production skills have been passed down to later generations. In 1992, Hu Guoxun, the descendant of the Hu family, restored the ancestral skills and established Huangshan Chaogang Food Co., Ltd., and revitalized the "Hu Xingtang" century-old store, so that the production skills of Huizhou's traditional folk snacks can be fully protected and passed on.
