Geng Fuxing's traditional snack making skills
"Geng Fuxing Hotel" is located in Fenghuang Food Street in Jinghu District, Wuhu City, Anhui Province. It is a "Chinese time-honored brand" with a history of more than 120 years. The predecessor of "Geng Fuxing" was "Geng Fuxing" dumpling noodle restaurant founded in the Guangxu period of the Qing Dynasty. It mainly sells noodles and steamed buns. The knife-cut noodles made by Han Guangyuan, a knife-cut noodle expert hired by the restaurant, are unique in craftsmanship and exquisite in skills. The knife-cut noodles have a smooth and tough taste, and are paired with shrimp roe noodles made from delicious shrimp roe and other ingredients, which are well-known far and wide. By the early 1920s, "Geng Fuxing" had become one of the several famous restaurants in Wuhu, along with "Yipinxuan" and "Tongqinglou". During this period, the famous white case dim sum chefs Liu Houfu and Huang Jiaqia who had been hired to join the restaurant made bold innovations, combining the unique and delicious hairy crabs in the middle and lower reaches of the Yangtze River with Wuhu's steamed buns, that is, adding crab roe and crab meat to the stuffing of the steamed buns to make delicious crab roe soup dumplings, which became Wuhu's unique seasonal delicacy. Next to "Geng Fuxing", a storefront was rented to bake sesame cakes. Customers could eat noodles and sesame cakes, both dry and thick, which complemented each other, making the business of "Geng Fuxing" increasingly prosperous. In 1940, the owner of "Geng Fuxing" cooperated with Yan Kaiyin, a sesame cake master with unique skills, to launch "Geng Fuxing Crispy Sesame Cake". So far, Geng Fuxing has brought together the traditional snacks of small steamed buns, shrimp roe noodles, and crispy sesame cakes that have long been popular among the people of Wuhu, forming the "three major items" of traditional snacks of "Geng Fuxing", which became a must-have for Wuhu people at that time and even later, to satisfy their appetite or to entertain guests. In the late 1990s, the old city of Wuhu was renovated, and the "Geng Fuxing" hotel located on the second street was demolished and closed for a time. Gao Shuhong, a new generation of food entrepreneur who has a special liking for Wuhu's traditional food culture, decisively inherited the "Geng Fuxing" brand, and at the same time recruited a large number of "Geng Fuxing" management and technical talents to operate under his command, and opened the business in Wuhu Phoenix Food Street in 2002. After experiencing a "Phoenix Nirvana", the "Geng Fuxing" Hotel has fully inherited the production skills of the "Geng Fuxing" traditional snacks, and developed and improved them. Today, the "Geng Fuxing" traditional snacks have become the symbol of Wuhu's traditional cuisine.
