BBQ

Beijing
🎧  Listen to Introduction

In the early years of Beijing, everyone knew the two restaurants, Wan in the south and Ji in the north. Ji's roasted lamb and Wan's roasted beef each had their own way of standing. Kaorou Wan is now located on Xuanwumen Inner Street, Xicheng District, and was founded in 1686. At first, a Hui Muslim named Wan pushed a cart to sell beef and mutton in the Xuanwumen area. The second generation installed a barbecue grill on the cart and started selling roasted beef. It was not until the third generation that they purchased a shop and started running the shop, specializing in roasted beef and beef and mutton buns. Art masters such as Zhang Daqian, Mei Lanfang, and Ma Lianliang were all frequent visitors here. The first plaque of Kaorou Wan was written by Pu Ru, the cousin of the last emperor of China, Puyi. In 1946, the master of Chinese painting, Mr. Qi Baishi, personally wrote a plaque of "Qingzhen Kaorou Wan". Now, the restaurant still hangs a poem written by Guo Moruo. In the barbecue room on the left side of the Kaorou Garden Hall, a pair of copper ovens are quite eye-catching. This is made by an old artist from Tianqiao specially invited by the boss. The grill on the stove is an antique from the Kangxi period, which is said to have a history of 300 years. It can be said to be the treasure of the barbecue garden. The meat of the barbecue garden is very exquisite. It requires four to five years old and weighing more than 300 kilograms of Xikou Ge cattle or dairy cows. Only the most tender parts such as the upper brain, ribs, tenderloin, milon, tibia, and monk's head are taken, and the meat tendons are removed. Selected beef and mutton, exquisite knife skills, exquisite seasonings, and specially selected pine branches, jujube wood, and pear wood are used for grilling. The grilled meat is smooth, fat but not greasy, lean but not dry. Barbecue Wan is now managed by Wan Huafu, the sixth generation heir of the Wan family. He has more than 50 years of experience in cutting meat. Regardless of beef or mutton, he always removes the fascia and cuts it into uniform slices of about six millimeters. He then adds sesame oil, soy sauce, shrimp oil, cooking wine, ginger juice, sugar, monosodium glutamate, chopped green onion, coriander and other condiments. Once grilled on a grill, the fresh and fragrant meat is very popular among Chinese and foreign guests. During the Cultural Revolution, Kaorouwan was once renamed Muping Kaorou Restaurant. After the Cultural Revolution, it was restored to its old name. Kaorouyuan also sells dozens of halal dishes. It is known as the four halal restaurants in Xicheng together with Youyishun, Hongbinlou and Minzu Palace Halal Restaurant. There are not many good places to eat in Xidan now. Many old restaurants, such as Hongbinlou, Tongchunyuan and Qingfeng Baozi Shop, have opened new stores elsewhere. Kaorouyuan is the one that comes to mind occasionally. One day, it was two o'clock in the afternoon and I went in because there were few people. I ordered roast beef and rolls. The roast beef was indeed tender and tasty. Rolls are the food used by the Hui ethnic group to entertain guests during festivals. I have heard of it for a long time, so I tried it today, but I felt a little greasy. Looking around, because it was 2 o'clock in the afternoon, there were only a few diners, and the waiter was wiping the glass next to me and mopping the floor, looking very busy. The most important thing is that I feel that nowadays old brands don’t pay much attention to store decoration. It is no different from ordinary small restaurants, with the same large round table and the same bar. There is a display cabinet for wine and a cash register behind it. The decoration of old brands should also have its own characteristics. Contact number: 66031700 Address: No. 102 Xuanwumennei Street (Xuanwu Store)
